Homemade Olive Tapanade
2 cups kalamata olives
6 tbs chopped fresh parsley
4 tbs lemon juice
4 tbs olive oil
6 cloves of garlic, grated or pressed
1/2 tsp ground pepper
Add all ingredients to a food processor and pulse until combined.
This makes a lot of tapanade, so it’s great to make and bring to a party, or if you know anyone (like my dad) who has a high dip to chip ratio, there will definitely be enough to share.
We ate ours with baked pita chips, but this would also be delicious with feta on warmed pita, crostini, or as a spread on sammies.
